What is Undhiyu ?
Imagine an explosion of so many delicious taste in your mouth at one go - soft aubergine 🍆, crunchy beans, spicy muthiyas, sweet yam, browned potatoes 😋
Undhiyu is a traditional Gujarati Winter speciality that includes most of the winter vegetables available in south coast of Gujarat .
Green veggies: Surti papdi, most of the green beans that you can think of ( lilva, peas, tuver, chana), aubergine, baby potatoes, purple yam, sweet potatoes, green bananas.
Muthiya - are like round spicy goti ( made from Besan, green chillies, ginger, spices). A type of pakora but not really a pakora 😛
Of course our Desi dish is incomplete without our colourful spices 🌶
The speciality is the way it’s cooked. Back home it’s cooked in matka ( earthen pot) but we just use here our copper bottom big pots 🤓 The food is cooked in layers depending on the hard ones goes at the bottom ( that takes longer to cook like papdi ), after every little while other veggies are added with muthiyas at last, then final topping of coriander and coconut masala and then everything is slow cooked and at intervals it gets stirred.
Tada... yummy yummy Undhiyu in your tummy with either lovely phulkas/ bajri roti/ puran poli...
